Summery Eton Mess

It's quite a difficult thing to describe summer is a dessert, but with this Eton Mess recipe, we think we've cracked it.
Made with fresh strawberries and raspberries, this Eton Mess recipe truly is a delight for anyone!

Ingredients

  • For The Shortbread Crumble
  • 1/4 Cup Coconut Flour
  • 1/4 Cup Almond Flour
  • 1/2 Scoop Vanilla Protein (sub 2 tbsp almond flour)
  • 1tsp Vanilla Bean Paste
  • 1/8 Coconut Oil (melted)
  • 1/4 Cup Maple Syrup
  • For The Strawberry and Raspberry Sauce
  • 1 Cup Chopped Strawberries (extra for topping)
  • 1/4 Cup Raspberries
  • 1/4 Cup Water
  • 1 Tbsp Maple Syrup
  • For The Meringue
  • 1/2 Cup Of Aquafaba (liquid from chickpea can)
  • 3/4 Cup Caster Sugar
  • 1/2 Tsp Cream of Tartar
  • Red Food Colouring (Optional)
  • For The Cream
  • 1/2 Cup Double Cream
  • 1 Tbsp Icing Sugar
  • 30g of Joe & Seph's Eton Mess Popcorn
  • 30g of Joe & Seph's Strawberries & Cream Popcorn

Method

  1. For The Shortbread Crumble

    Combine all ingredients at the same time, stir and set aside

  2. For The Strawberry & Raspberry Sauce

    Add all ingredients to a sauce pan and mash together on a low heat for around 8 minutes until thickened. Set aside to cool.

  3. Preheat The Oven

    Preheat the oven to 90c

  4. For The Meringue

    Whisk the aquafaba in a bowl for about 3-5 minutes, gradually add the sugar and continue to whisk for another 3-5 minutes. Add the cream or tartar and whisk for a further 1-2 minutes until stiff peaks form.

  5. Bake!

    Line baking trays. Paint stripes of food colouring in piping bag and spoon the meringue into the bag. Pipe little meringue kisses and bake for 1hr40 and set aside. Store left over meringue in an airtight container.

  6. For The Cream

    Whisk for about 3-5 minutes until thickened and set aside in the fridge.

  7. Let's Add The Popcorn!

    Assemble; Layer all the elements with generous amounts of Joe & Seph's Eton Mess and Strawberries and Cream popcorn and DEVOUR.
